The competition for most meaningful careers is enormous, and so having enough work experience is crucial. Employers need to see this on your CV as evidence that you have acquired the skills needed to do the job.
As with any career, it is vital to be able to show interest and enthusiasm in the area you hope to work in. Volunteer, find internships, get involved in University societies related to the issues you are interested in, and keep up to date with the issues involved.
You might also consider temping. Some specialist recruitment agencies for the non profit sector also offer temp jobs, for example Charity People.
